一、樣和用料（The餃面 materials）

餃子面粉；水；豬肉；韭菜；雞蛋；鮮蝦仁；發好的香菇；蔥姜末；芝麻油、醬油、更好蠔油、樣和料酒；鹽、餃面糖、更好雞精?樣和
二、餃子的餃面做法（Making dumplings）
1、Put the water and flour into a bowl and make a smooth dough,更好Set aside.
將水和面粉都放到面盆里，和成光滑的樣和面團，待用。餃面
2、更好Minced meat,樣和 add sesame oil, cooking wine, soy sauce, oyster sauce, ginger onion mix well.
肉剁碎后，加入香油、餃面料酒、更好醬油、蠔油、蔥姜末拌勻。
3、Beat the eggs until done, chop them into small pieces. Mince the shrimps and cut the mushrooms into small pieces.
雞蛋打散炒熟，剁成末。蝦去蝦線剁碎，發好的香菇切成末。
4、Wash leek, dry slightly, and chop.
韭菜洗凈、稍微晾干，切碎。
5、Add eggs, shrimp, mushrooms and leeks to the minced meat, add the right amount of salt, sugar, chicken essence. It's a delicious filling.
將雞蛋、蝦、蘑菇和韭菜加到肉餡中，加適量的鹽、糖、雞精。就是美味的餡料了。
6、Roll dough into long strips, cut into small pieces, about 10 g of flour mixture, roll into a circle. Take the right amount of filling and wrap it in the shape of silver ingot.
將面團搓成長條，切成小塊，大約10克左右的面劑，搟成圓形。取適量的餡料，包成元寶形狀。
7、Pot add water, boil, next dumplings. Cook until the dumplings float up, add a little cold water, and boil again when cooked. It takes about 3 to 5 minutes from the time the dumplings float over the water.
煮鍋加水，煮開，下餃子。煮到餃子飄起來，加一點冷水，再次沸騰時就熟了。從餃子飄在水面開始計時大約3～5分鐘。
餃子面的和法如下：
材料準備：面粉2斤、水適量、食鹽適量、勺子、清水、搟面杖等等。
1、一般用餃子專用粉來包餃子，高筋面粉就很好，在面粉中加入適量食鹽，一般1小勺就可以。
2、加入適量清水，邊加邊攪拌。把面粉攪拌成絮狀。
3、面不要和的太硬，要稍微軟一些比較好用。
4、把絮狀的面和成面團，要盡量多揉幾遍。
5、直到把面團揉成光滑的面團，做到面光，盆光，手上也要光滑，三光。
6、把面團醒面20分鐘左右就可以揪成大小均勻的劑子，搟成面皮包餃子了。
